POKOTABI / Kiyomasa
伊勢海老蕎麦 清正
Savor rich spiny lobster potage-style dipping broth, aromatic crustacean oils, and hand-cut soba at Kiyomasa, bridging casual lunch noodles with evening lobster banquets and sake.
01 / ABOUT THE PLACE
Where the concentrated fragrance of shellfish meets the clean, firm snap of hand-cut buckwheat noodles, Kiyomasa places Japanese spiny lobster (Ise ebi) center stage. One of the signature dishes, the spiny lobster potage tsuke-soba, pairs chilled soba with a piping-hot dipping broth slowly extracted from whole spiny lobsters over hours. The velvety, bisque-like broth clings generously to the resilient noodles, and pouring hot soba-yu noodle broth into the bowl at the finish lets you savor the last lingering drop of rich crustacean stock.
The variations on chilled mori soba are equally inventive. The white sesame dipping soba combines a bonito-dashi base with a hint of sansho pepper and comes alongside a cruet of house-made spiny lobster oil, releasing an instant rush of toasted shellfish aromatics as soon as it is drizzled in. Meanwhile, chilled soba served with crisp, freshly fried tempura is dusted with spiny lobster salt, providing an accent of coastal salinity that complements the light, crackling batter.
Dinner extends well beyond noodles to showcase seafood specialties such as whole salt-grilled spiny lobster, sea urchin-glazed golden broils, and pristine sashimi. To accompany the food, the cellar offers carefully chosen labels including Zaku Miyabi no Tomo from Mie and Azumaichi from Saga, alongside comforting drinks like aromatic barley shochu paired with toasted buckwheat tea.
Outfitted with both counter seating and private rooms, the dining room carries an unhurried, calm composure that works as naturally for a quiet solo noodle lunch as it does for lingering over a multi-course dinner.
